Sticks‘n’Sushi to Open First Midlands Site With Birmingham This Autumn

SticksʹnʹSushi will open its first Midlands restaurant at Birmingham’s Three Chamberlain Square this Autumn as the Danish restaurant group continues its nationwide expansion.

The 250-cover restaurant will join the £1.2bn Paradise Birmingham development, occupying a ground-floor space at Three Chamberlain Square with an adjoining terrace. The opening with create 60 jobs locally.

Designed by award winning Danish architects OEO Studio whose projects include Noma Kyoto, and more recently, Sticks’n’Sushi Tivoli Gardens, Copenhagen – the restaurant will combine the brand’s signature Danish design approach with Japanese references through the use of timber and structural rhythm. The interiors will feature a warm material palette with rich, layered tones, creating a refined and inviting dining space.

Guests can expect sharing dishes of sushi, sashimi, salads and grilled sticks; available à la carte or in generous set menus, for both dine in and takeaway. Popular dishes include Beef Tataki, beef fillet with miso aioli, truffle ponzu and artichoke crisps and Temaki Setto, DIY sushi rolls with lobster, wagyu tartare and avocado. From the grill, highlights come in the form of Gindara No Miso, miso-glazed black cod, Iberico Secreto, miso-cured black Iberian pork and Ramu Niku, lamb with garlic butter, spring onion and soy sauce.

The drinks list will include sake, Japanese teas, cocktails, premium spirits and beer, including the brand’s recent collaborative Japanese rice lager with Danish brewery Mikkeller.
